The underside baffle system gives chefs control, creating multiple temperature zones for cooking different items at once. Unlike standard griddles, this one sits above the Fire Kettle, allowing airflow and fire management while keeping the flames alive and circulating.

30-Gallon Griddle is to be used on 30-Gallon Fire Kettles. 50-Gallon Short Stack Griddle is to be used on 50-Gallon Fire Kettles.
